If you want to follow this idea, keep the pepper rings spread along the filling rather than piled at one end.

I am obsessed with those bright pink onions. There’s so much tucked underneath them, including avocado slices, sprouts and folded deli meat.

The little dill sprigs are a lovely finishing touch.

The other slice has an orange spread across its browned surface. For your own version, try a chili mayo if you want a little heat.
